Sugar creeping into my mind

Living in a dorm is a little tricky. I do not have access to a real kitchen, so one of the main things I am missing from home is being able to cook. I have been keeping track of recipes to try when I get home for break. I have been eating healthy the last few weeks and cutting out desserts, so my sugar tooth is raging for some chocolate at the moment. Here are a few Sweets that caught my eye the last few days! 


Twix Cheesecake Pie

Looks so YUMMY!
  • Ingredients: 2 8-ounce cream cheese bars, 1/2 cup sugar, 2 large eggs, 16 Twix bars, & 8 inch Chocolate Cookie Piecrust.
  • Oven at 325 degrees
Directions:
  • With a mixer, beat 2 8-ounce bars of cream cheese, at room temperature, with a 1/2 cup of sugar and 2 large eggs. 
  • Mix in 10 chopped Twix Bars. 
  • Pour mix into an 8 inch Chocolate Cookie Piecrust
  • Bake at 325 degrees for 40-45 minutes; let cool. 
  • Sprinkle with 6 chopped Twix bars while it cools.
  • Chill until pie is firm
  • Enjoy a piece of pie :)


Devilishly Delicious Chocolate Cupcakes

Chocolate Heaven

  • Ingredients: 4 oz. Nestle Chocolate bittersweet chocolate baking bar (broken into pieces), 1 cup all-purpose flour, 1/4 cup unsweetened cocoa powder, 1/2 teaspoon baking soda, 1/4 teaspoon of salt, 1/2 cup buttermilk, 1/4 cup of water, 1 cup packed light brown sugar, 1/2 cup vegetable oil, 3 large eggs, 1/2 teaspoon vanilla extract
  • Oven at 350 degrees
Directions:
  • Preheat oven to 350 degrees F. Paper line 14 muffin cups
  • Microwave small chocolate pieces in a microwave safe bowl for 45 seconds, then stir. If piece still retain shape, put in microwave for 10-15 seconds at a time until melted. Remember to stir. 
  • Mix flour, cocoa powder, baking soda, and salt into a small bowl. 
  • In a measuring cup, combine buttermilk and water. 
  • In a different bowl, beat the brown sugar, oil, eggs, and vanilla extract for 2 minutes on high. Beat in melted chocolate. 
  • Beat flour mixture into creamed mixture alternately with buttermilk mixture. 
  • Spoon into muffin cups, 3/4 full. 
  • Bake for 18-23 minutes or until tooth pick comes out clean. 
  • Let cool in pan for 10 minutes, then remove to wire rack.
